UNDERSTANDING THE DIFFERENCE: COCOA VERSUS CACAO
The difference between cocoa and cacao primarily lies in how they are processed, which impacts their nutritional content and flavor.
They both originate from the seed (bean) of the Theobroma cacao tree.
In summary:
• Cacao refers to the raw, less-processed form of the bean and its products.
• Cocoa refers to the product made from beans that have been roasted, which alters the flavor and reduces some of the nutritional benefits.
It's also worth noting that some products labeled "cocoa" may undergo an additional processing step called Dutch-processing (alkalization), which further reduces acidity and bitterness, and changes the color.
